Apple Peanut Butter Cookies

Ingredients:

1/2 cup shortening
1/2 cup chunky peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup grated peeled apple

Method:

1. Preheat oven to 375 Degrees. In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy, 5 to 7 minutes. Beat in egg and vanilla. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.
2. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until golden brown, 10 to 12 minutes. Cool for 5 minutes before removing to wire racks.

YIELD: about 2-1/2 dozen.
