Autumn Apple Meatloaf

Ingredients:

2 pounds ground sirloin
1 1/2 cups Pepperidge Farm Herb Stuffing Mix -- Not Cubes
2 cups Granny Smith apples or red sweet ones -- finely chopped
3 eggs
2 teaspoons salt -- or to taste
3 Tablespoons horseradish
1 onion -- finely chopped
3/4 cup Ketchup -- Heinz
2 Tablespoons mustard

Method:

Preheat oven to 350 degrees. Mix all ingredients together in a large bowl w/ a wooden spoon.
Instead of using a loaf pan, I recommend lining a jelly roll pan w/ heavy duty foil & shaping the mix into a loaf & place it on the foil. Bake 1? hours or until cooked through (160 degrees is safe). To decrease cooking time I form the mixture into smaller loaves. It?s also fun to bake them in muffin tins ? kids love it. The smaller the loaf, the less time it takes to bake so use your instant-read thermometer to check for doneness.

GLAZE
16 oz. apple juice
? cup ketchup
In a small pan, reduce the apple juice to about 1/3 cup, then add ketchup. Brush over meatloaf during last 15 minutes of cooking.
