Award Winning Coffee Cake

Ingredients:

For the cake:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 eggs
1 cup sugar
1/2 cup butter, room temperature
1 teaspoon vanilla
1 (8 ounce) container sour cream
For the streusel:
1 cup walnuts, optional, chopped
2/3 cup brown sugar
1/2 cup sugar
2 teaspoons cinnamon
2 teaspoons vanilla

Method:

Step 1 - Preheat the oven to 325 degrees F.
Step 2 - In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Step 3 - In a large bowl, add the eggs, sugar, butter, and vanilla.
Step 4 - Beat the wet ingredient mixture until it begins to come together.
Step 5 - Add the dry ingredients. Mix until just moist.
Step 6 - Add the sour cream. Mix until smooth but be careful not to overmix.
Step 7 - In a bowl, mix together the walnuts, the brown sugar, sugar, cinnamon, and vanilla.
Step 8 - Spray a 10-inch tube pan with baking spray.
Step 9 - Spoon 1/2 the batter into the bottom of the pan, spreading it until even.
Step 10 - Sprinkle it with about 1/2 of the streusel.
Step 11 - Add another layer of batter and another layer of streusel to the tube pan.
Step 12 - Bake for 40-50 minutes.
Step 13 - Cool completely before serving.
