Baked Haddock - Diabetic

- 1 pound haddock or cod fillets
- 1/4 cup fresh lemon juice
- 1/2 teaspoon vegetable oil
- 2 garlic cloves, minced
- 1/4 cup Chicken Broth
- Pepper to taste
- 4 large mushrooms, sliced
- 1 medium-size carrot, grated
- 2 teaspoons dried leaf mint


Preheat oven to 350 degrees F. Rinse fish and pat dry. Place
fish fillets in a 9-inch casserole dish, add lemon juice and
turn fish to coat well. Marinate 10 minutes. In a small
non-stick skillet, heat the oil, saute garlic and then spoon
over fish. Add remaining ingredients to casserole dish. Cover
with foil and bake 25 to 35 minutes, until fish turns from
translucent to opaque.
