1 lb. green beans, washed and trimmed
2 Tbsp. olive oil
3 Tbsp. balsamic vinegar
2 Tbsp. crumbled goat cheese
salt & pepper
1. Toss green beans with olive oil and spread on rimmed baking sheet.
2. Roast at 400 degrees for 20 minutes.
3. In a small bowl, combine balsamic vinegar and juice/pulp of ½ orange.
4. Drizzle over beans and roast for an additional 2 minutes.
5. Season with salt & pepper.
6. Top with crumbled goat cheese.
