Batter Fried Shrimp


2 pounds uncooked shrimp, large
3/4 cup unsifted flour
3/4 cup water
1 egg, slightly beaten
1 tablespoon sugar
1/2 teaspoon salt
Planter's Peanut Oil


Peel shrimp leaving tails on; devein. Split shrimp part way through, butterfly fashion. Combine flour, water, egg, sugar and salt to make a batter. Dip shrimp into batter and fry in deep, hot (375 degrees) Planter's Peanut Oil until golden brown. Drain on paper towels.
Makes about 6 servings.
