2 Tbsp. olive oil
1 green pepper, diced
1 medium onion, diced
2 jalapeno peppers, seeded & diced
8 cloves garlic, minced
5 Tbsp. chili powder
2 Tbsp. cumin
2 tsp. Old Bay Seasoning
1 and 1/2 tsp. kosher salt
1 tsp. dried oregano
1/4 tsp. ground pepper
1 and 1/2 lbs. ground turkey
2 (14 oz.) cans diced tomatoes, not drained
1 can black beans, drained & rinsed
1 can kidney beans, drained & rinsed
1 can great northern beans, drained & rinsed
1 can pinto beans, drained & rinsed
1 can garbanzo beans, drained & rinsed
2 and 1/2 c. water
1. Heat olive oil in a large soup pot over medium heat.
2. Add green pepper, onion, jalapeno, garlic, and seasonings. Cook until vegetables have softened.
3. Add ground turkey and cook over medium-high heat until turkey is cooked through.
4. Stir in tomatoes, beans, and water and simmer until heated through.
5. Garnish with cilantro.
