Blueberry Pie Bars


1/2 c. salted butter, at room temperature
3/4 c. sugar
2 eggs
1 tsp. vanilla
1and 1/2 c. flour
3/4 tsp. baking powder
1/2 tsp. cinnamon
1 can Lucky Leaf Blueberry Pie Filling
Streusel Topping
1/4 c. flour
2 Tbsp. sugar
1 and 1/2 Tbsp. butter, melted
1 c. powdered sugar
1 Tbsp. milk
1 tsp. vanilla


1. Cream butter; add sugar and beat well.
2. Beat in eggs one at a time.
3. Add vanilla.
4. Gradually stir in sifted dry ingredients.
5. Spread ¾ of dough in a lightly grease 8x11 inch baking pan.
6. Spread blueberry pie filling over dough.
7. Spoon remaining dough over pie filling, spreading lightly. *Not all pie filling will be covered.
8. In a separate small bowl, combine streusel ingredients and sprinkle over the top of bars.
9. Bake at 375 degrees for 35-40 minutes.
10. Cool 15 minutes.
11. In a small bowl, mix powdered sugar, milk, and vanilla until smooth; drizzle over bars.
