Breakfast English Muffin Casserole

Ingredients:

5 English muffins, cut into eighths
8 strips bacon, pre-cooked and chopped
8 sausage links, pre-cooked and chopped
1 cup cheddar cheese, shredded
1 cup kale, chopped
8 eggs
1/3 cup milk
2 scoops collagen peptides
salt, to taste
pepper, to taste

Method:

1 Preheat the oven to 325 degrees F.
2 Lightly grease a 1.5-quart baking dish.
3 Line the prepared baking dish with the English muffin pieces, the bacon, the sausage, the cheese, and the kale.
4 In a medium bowl, whisk together the eggs, the milk, the collagen peptides, the salt, and the pepper.
5 Pour the egg mixture over the English muffin mixture.
6 Cover the dish with foil and allow it to sit, about 20 minutes.
7 Bake, covered, for 25 minutes.
8 Carefully remove the foil from the pan and bake until the eggs have firmly set and the top is lightly golden brown, about 15 to 20 minutes.
9 Slice and serve.
