Broccoli Soup

1 large bunch of broccoli, rinsed and broken into florets
2 cups chicken broth
2-3 cups milk
1 onion, sliced
2 cloves garlic, peeled and minced
3 tblsp. Butter or margarine
2-3 tblsp. Flour
salt & pepper


Cook broccoli in chicken broth until tender. Add milk.
In a sauté pan, melt butter and sauté onions & garlic.
When onions are softened stir in the flour and make a roux.
Add this to the soup and stir gently until the soup thickens.
Smash the broccoli.
Stir and serve.
