Broiled Chicken Deluxe

Ingredients:

1 broiler fryer chicken, halved
1/2 lemon
2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1/2 cup butter, melted, divided
2 teaspoons granulated sugar

Method:

In broiler pan, place chicken, skin side up. Rub surface of chicken with lemon, squeezing some juice onto meat. In bowl, mix together salt, pepper and paprika. Sprinkle mixture over chicken. Brush with one-half of the butter; sprinkle with sugar. Place broiler pan as far from heat as possible and cook at 450 degrees for 10 minutes allowing seasonings to penetrate. Move broiler pan up so that chicken is 3 to 6 inches from the heat in gas range or 6 to 9 inches from heat in electric range. Broil, basting frequently with remaining butter and turning to insure even browning, about 35 minutes, or until fork can be inserted in chicken with ease.
Makes 2 large servings.
