Brown Rice Vegetable Casserole (Microwave)

1 cup instant rice
1 stick butter
1 can beef consume
1 can french onion soup
1 tsp olive oil
1 small onion chopped coarsely
1/2 cup green pepper chopped coarsely
1/2 cup cauliflower cut into small pieces
1/2 cup broccoli cut into pieces
1/2 cups nuts of your choice
1/2 cup grated cheese of your choice


Melt butter in microwave safe dish
add rice, and soups. Mix well. Microwave for eight minutes, checking every 2 minutes and stirring.
Microwave for at least 6 minutes more. Stirring every 2 minutes.
If rice is not done andor it is getting dry add 1 to 2 tablespoones warm water.
In a frying pan add oil. Heat until warm. add onions, peppers, caulieflower, and broccoli. Cook covered until vegetables are tender probably about 5 to 6 minutes.
Stirring occasionally
Pour vegetables over rice mixture. top with nuts and cheese.
Place top on bowl and allow the heat to melt the cheese.

Helpful Hints:

For a change you can also mix the vegetables together in the cooked rice mixture and then top with nuts and cheese.
Leftovers can be frozen and reheated later.
