CARROT SALAD

Ingredients:

4 c. shredded carrots (whole carrots or 1 bag of matchstick carrots)
1 c. shredded apple (1 medium apple)
1/3 c. raisins
1/4 c. mayo
1/4 c. sour cream (substitute Greek yogurt)
2 Tbsp. lemon juice
1 Tbsp. honey
1/4 tsp. salt
1/4 tsp. ground ginger

Method:

1. In a medium mixing bowl, combine shredded carrots, apples, and raisins.
2. In a separate small bowl, combine remaining ingredients.
3. Stir dressing into carrot mixture until combined.
