COCONUT BEEF CURRY

Ingredients:

5oz natural yoghurt
1 clove garlic, crushed
1 Tablespoon curry powder
2lb lean stewing beef, cubed
2oz Desiccated coconut
¼ pint milk
½ pint beef stock
14oz can tomatoes
Boiled rice to serve
Accompany with mango chutney, diced cucumber and yoghurt

Method:

Mix yoghurt, garlic and curry powder, stir in the beef and leave to marinade for 1 hour.
Meanwhile soak coconut in milk, place beef and marinade in to a pan with coconut, milk, stock and tomatoes.
Bring to the boil, cover and simmer for 2 hours or until meat is tender, stir occasionally.
Serve with rice and accompaniments.
