Caribbean Grilled Chicken Salad


1 (5 oz.) container BrightFarms Spring Mix
1 Simple Truth boneless, skinless chicken breast, marinated
1/2 c. fresh pineapple, chopped
1/2 c. red pepper, chopped
1/2 mango, chopped
1/2 avocado, chopped
2 Tbsp. shredded carrots
2 Tbsp. shredded purple cabbage
1 Tbsp. sliced almonds
For marinade:
2 Tbsp. orange juice
1 Tbsp. olive oil
1 tsp. lime juice
1 Tbsp. soy sauce
1 Tbsp. fresh cilantro, minced
1/2 Tbsp. honey
1 clove garlic, minced
1/4 tsp. ginger
1/4 tsp. allspice
For the dressing:
1/4 c. olive oil
2 Tbsp. lime juice
1 Tbsp. honey
1 tsp. dijon mustard
1/4 tsp. ginger
1/4 tsp. garlic powder
1/8 tsp. pepper
pinch of allspice (optional)


1. Combine ingredients for marinade; pour over chicken breast and marinate 1 hour or overnight.
2. Grill chicken until no longer pink.
3. Assemble salad by topping spring mix with pineapple, red pepper, mango, avocado, shredded carrots, purple cabbage, sliced almonds, and grilled chicken breast.
4. Combine ingredients for dressing; shake well.
5. Pour dressing over salad as desired.
