Carrot Cake Truffles

Ingredients:

1 box carrot cake mix made to package directions or favorite carrot cake recipe(aprox.
12 inch round)
2 cups cream cheese icing.
12 oz white chocolate chips
2 tbsp vegetable oil
1/2 tbsp cinnamon

Method:

In a large mixing bowl mash together carrot cake and icing. Roll cake and icing mix into 1 oz balls place on a parchment lined sheet tray. Place in the freezer for fifteen minutes. Melt white chocolate and oil in the microwave stirring every thirty seconds until chocolate is smooth ad completely melted. Stir in cinnamon. Dip cake balls
in melted chocolate and place back in the freezer for ten to fifteen minutes or until white chocolate hardens. Recipe makes thirty to forty cake truffles.
