Cheddar And Bacon Shrimp Po Boys


12 18 20 size raw peeled and deveined shrimp
1/2 plus 1/2 cup mayonnaise
1/2 tbsp Cajun seasoning
8 strips cooked cooked bacon
4 slices cheddar cheese
4 hoagie buns
4 leaves romaine lettuce
1 cup Panko bread crumbs


Mix mayonnaise and Cajun seasoning. Separate mayonnaise into two equal ortions reserving one portion for later. Using one portion of the mayonnaise coat the shrimp and then roll the shrimps in the Panko bread crumbs. Bake in a 400 degree oven for twelve minutes. Place one slice of cheese, two strips of bacon 1 leaf of lettuce and a smear of mayonaise onto each hoagie. Top with three shrimp and serve immediately. Recipe serves four.
