Cheeseburger In a Bowl

Contributed By: Terry Borden

Ingredients:

1 pound ground beef, 90% lean
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup reduced-fat ranch salad dressing
2 tablespoons ketchup
4 cups iceberg lettuce, shredded
4 cups romaine, chopped
1 medium cucumber, finely chopped
1 medium tomato, finely chopped
1/2 cup dill pickles, chopped
1/4 cup red onion, finely chopped
3/4 cup cheddar cheese, shredded
potato chips, optional, to taste, crushed

Method:

1 In a small bowl, combine the beef, salt, and pepper, mixing lightly but thoroughly.
2 Shape the seasoned beef into four 1/2-inch-thick patties.
3 Over medium heat, grill the burgers (covered) until an instant meat thermometer reads 160 degrees F, about 4-5 minutes on each side.
4 In a small bowl, whisk the salad dressing and ketchup together.
5 In a large bowl, toss the iceberg lettuce and romaine lettuce with 1/2 of the dressing mixture.
6 Divide the following among four salad bowls: the dressing-tossed-lettuce, burgers, cucumber, tomato, pickles, red onion, and cheese.
7 Top each bowl with the crushed potato chips.
8 Serve with the remaining dressing.
