Cheesy Bacon Potato Skins

Ingredients:

3 medium potatoes
1 c. shredded mozzarella cheese
1/2 c. shredded Parmesan cheese
1/4 c. mayo
1/4 c. sour cream
1/4 c. Cambria Katherine's Vineyard Chardonnay
1/2 tsp. dry mustard
1 clove garlic, minced
3/4 c. chopped, cooked bacon
2 green onions, sliced

Method:

1. Wash potatoes and prick with a fork. Bake at 425 degrees for 30 minutes or until fork tender. Cool.
2. Cut potatoes in half lengthwise and scoop out the center of each.
3. In a small mixing bowl, combine cheeses, mayo, sour cream, wine, mustard, and garlic. Blend until smooth.
4. Stir in 1/2 c. bacon.
5. Divide mixture evenly among potato skins.
6. Bake 30 minutes or until edges begin to brown.
7. Remove from oven; top with additional cooked bacon and sliced green onions.
