Cheesy Cauliflower Casserole

Ingredients:

1 large head of cauliflower, cut into florets
1 cup frozen corn
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup milk
1 1/2 cups cheddar cheese, shredded
salt and pepper, to taste

Method:

1. Preheat the oven to 350 degrees F. Bring a large pot of water to a boil. Add the cauliflower and boil it for 5 minutes, allowing it to soften. With 1 minute
remaining, add the frozen corn. Drain the vegetables and set them aside.
2. In a medium-sized saucepan, add the butter over medium-high heat. Add the flour, stirring until completely smooth. Add the milk and 1/2 cup of cheese,
then continue stirring until the cheese is melted and the sauce thickens up.
3. Add the cauliflower and corn to a medium-sized casserole dish. Pour the cheese sauce over the vegetables, mixing it so the cheese covers everything. Sprinkle
it with salt and pepper to taste, then add the 1 cup of remaining cheddar cheese on top.
4. Place the casserole in the oven and bake for 30 minutes. After 30 minutes, turn the oven to broil and bake (while watching it) for 2 to 3 minutes, or until
the cheese is lightly browned.
