Chicken pineapple salad


12 ounces Grilled chicken breast, shredded
1/2 head Napa cabbage, thinly sliced
1/2 head Bok choy, thinly sliced
1 plum tomato, thinly sliced lengthwise
4 scallion, thinly sliced
1 pineapple, cored and sliced
1/4 cup lime juice
2 tablespoons Dijon mustard
1 tablespoon olive oil
salt and pepper to taste


1. In a small bowl, wisk together mustard, oil, and lime juice.
2. In a large bowl, mix together the scallions, cabbages, chicken, and tomatoes;
just before serving, toss chicken mixture with pineapple and dressing, (do
not let stand).
3. Salt and pepper to taste.

Prep time 20 minutes.
