Chicken tamale Loaf

Ingredients:

1 medium onion, chopped
1 teaspoon garlic powder
1/2 cup cooking oil
1-1/2 cups yellow cornmeal
1-3/4 cups hot chicken broth
1-1/2 cups diced chicken
1 large (16 ounce) can tomato sauce
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
3 eggs

Method:

Beat eggs well in small bowl, set aside. Mix cornmeal and dry ingredients
in large mixing bowl. Stir in remaining ingredients, including eggs until well mixed. Pour into greased 9 inch by 5 inch loaf pan. Place loaf pan in 13 inch by 9 inch baking pan and pour 1
inch of water in larger pan. Bake at 325 degrees for 40 minutes.
