Cinnamon Muffins

Ingredients:

1-1/4 Cup skim milk.
1-1/2 Cup Quaker Oats Bran cereal, uncooked.
ΒΌ Cup brown sugar substitute or firmly packed brown sugar.
1 to 1-1/2 TSP ground cinnamon.
4 TSP vegetable oil.
1 Large Egg, beaten.
1 Cup All Purpose Flour.
2 TSP Baking Powder.

Method:

Coat 12-medium muffin cups with no-stick vegetable spray, or line with paper
baking cups.
In a large mixing bowl combine skim milk and Oat Bran cereal. Add egg, brown
sugar, cinnamon and oil. Mix well.
Combined the flour and baking powder, then add to Oat Bran mixture, mixing
until dry ingredients are moistened.
Fill muffin cups 2/3 full
Bake 20 mins or until golden brown.
