Citrus marinade for fish

Ingredients:

This is a great marinade for fish that needs to have added flavor such as swordfish, mahi mahi or Mako shark.

½ cup lime juice
2 tblsp. Soy sauce
¼ cup honey
2 cloves garlic, minced or 1 tsp. garlic powder
1 tsp. onion powder
½ tsp. Tabasco
2 tblsp. Spicy mustard
½ tsp salt
2 tblsp. Oil
freshly ground pepper

Method:

Mix ingredients together and marinade fish fillets or steaks for no more than 2 hours.
Since this is a citrus marinade, allowing fish to marinade in it will lead to the fish “cooking” in the marinade.

Grill fish such as swordfish for 5 minutes on each side.
If you are using the outdoor grill, heat it on low which would be about 400F.
This may be cooked in a cast iron frying pan or under the broiler with equally good results.
