Cottage Potatoes

Ingredients:

6 large potatoes, peeled, cooked then mashed
5 oz. sour cream
8 oz. cottage cheese or ricotta cheese
1/4 to 1/2 stick butter
salt & pepper



Method:

Mix all ingredients together, until smooth, Place in greased casserole dish.

Put a few pads of butter here & there and sprinkle paprika over the potatoes.

Heat in oven at 350* till heated through.


The potatoes "puff-up" as they heat up.



Helpful Hints:

Can be made ahead & placed in fridge, then heat in oven for 30 to 45 minutes.
