Cranberry Cake

Ingredients:

3 large eggs
2 cups sugar
3/4 cup softened butter(cubed)
1 teaspoon vanilla
2 cups all purpose flour
1 teaspoon salt
1 bag cranberries (approximately 3 cups(

Method:

Preheat oven to 350.
Lightly grease Bundt pan.
Beat eggs and sugar until smooth and double in size (approximately 5 to
7 minutes).
Add butter and vanilla, beat for 2 minutes, or until incorporated.
Using spatula, fold in flour, salt and cranberries. Batter will be thick.
Smooth out batter in baking pan.
Bake 50 to 60 minutes.
Cool in pan 15 minutes before removing.
Sift 1/4 cup confectionery sugar over top.
