Cranberry Muffins

Ingredients:

2 cups flour
1 cup sugar
2 eggs
1/2 cup shortening
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp.nutmeg
1 tsp.cinnamon
1/2 tsp. ginger
1/2 cup orange juice
1 Tablespoon vanilla
1 1/2 cup cranberries
1 1/2 cup chopped walnuts

Method:

In a medium bowl mix together flour, sugar, baking powder, baking soda, and spices. Cut in shortening with pastry blender or 2 knives. Stir in orange juice,
vanilla, and eggs. Fold in berries and nuts. Spoon into 18 well greased or paper
lined muffin cups.
Bake at 350 degrees for 25 minutes.
