Makes 6 cups
2 bunches broccoli, steamed about 3 minutes
16 oz silken tofu
1 packed cup of basil leaves, save a few for garnish
Juice of 1 lemon
3 tbsp cashew butter
Pinch of salt
Freshly ground pepper
Process all ingredients in a blender and serve cold or gently heat it for a warm
treat. Garnish each cup with one or two basil leaves.
This soup is delicious hot or cold. It is protein rich from the tofu and cashew butter and loaded with vitamin C from the broccoli.
