Curried Egg Salad Sandwhich


6 hard boiled eggs, peeled
2 stalks of celery, diced small (about 1/2 cup)
1/3 cup mayonnaise
4 green onions, diced
2 teaspoons curry powder
Kosher salt & freshly ground pepper to taste


In a bowl, use a fork to mash the eggs.
Add the celery, mayo, green onion, curry powder and salt and pepper to taste. Mix together well and place between two slices of multigrain bread.
