Curried Fruit And Cream Pizza

Contributed By: Janis Limon

Ingredients:

MILK PIZZA DOUGH
2 3/4 c All-purpose flour
3/4 c Milk
5 tb Unsalted butter, softened
1 t Baking powder
1 t Salt

2 Apples, peeled, cored 1/2-inch dice
1 Pear, peeled, cored 1/2-inch dice
1 sl Pineapple 1/2-inch dice
1 Banana, peeled 1/2-inch dice
3 oz Seedless grapes
1/2 c Heavy whipping cream
2 tb Curry powder

Method:

Make the pizza dough. Preheat an oven to 450F. In a large bowl combine 2 3/4 cups flour, milk, butter, baking powder and salt. Stir with a fork until a soft dough forms. Shape into a ball. Lightly flour a work surface with about 1/2 cup flour. Using a rolling pin, roll out the dough into a round 1/8 inch thick and 12 inches in diameter. Flip it over occasionally as you roll it out. The dough should be slightly thinner in the middle than at the edge. When it is the correct size, lift the edge of the pizza to form a slight rim. If using a baking stone or tiles, place in the oven now.

Place all the fruits in a saucepan. Pour in the cream and gently stir in the curry powder. Cover and cook over low heat until the fruits are soft and the cream is absorbed, about 15 minutes. Roll out the pizza dough and cover with the fruit mixture. Transfer the pizza to the oven and bake for 10 minutes. Reduce the temperature to 400F and bake until the crust is golden, about 10 minutes. Serve immediately.
