Dads Country Breakfast Skillet

Ingredients:

3/4 pound bacon
1 cup red potatoes, diced
1/2 cup green peppers, chopped
4 eggs
1/4 cup cheddar cheese, shredded
parsley, optional, to taste
salt, optional, to taste
pepper, optional, to taste

Method:

1 Cut the bacon into 1-inch pieces.
2 Place the bacon pieces into a skillet over medium heat.
3 Cook until the bacon is crisp.
4 Drain half of the fat.
5 Return the skillet to the stove-top over medium heat.
6 Add the potatoes and the peppers to the pan.
7 Cook until the potatoes are golden brown, about 8-10 minutes.
8 Place the potato and bacon mixture into a bowl. Place the skillet back on the stovetop.
9 Add four eggs into the skillet without stirring. Let them cook for 1 minute or until the egg whites set.
10 Carefully place the potato and bacon mixture around the eggs, sprinkling the cheese on top.
11 Cook for 1 minute.
12 Allow the skillet to cool, then serve!
