Deconstructed Kebabs

Ingredients:

1 bottle Italian salad dressing with lots of herbs, (such as Olive garden"
Chicken Strips, about 1 pound
...Color Vegetables:
1 green bell pepper, sliced
1 Red or yellow bell pepper, sliced
1 yellow onion, cut into chunks
8 oz. sliced fresh Mushrooms
Salad or small tomatoes, 1 cup or more

Method:

Marinade chicken strips in dressing, leaving enough to toss with vegetables, about 2 Tablespoons;

Set oven on broil and broil chicken, in shallow pan, cookie sheet for 10 minutes. Turn with spatula and broil an additional 5 minutes...
will be a bit charred.

Meanwhile, toss prepared vegetables with remaining dressing and spread on another cookie sheet. turn temp to 450 and cook for 15 minutes, can turn and cook additional 5 minutes if you like.

Keeps well in refrigerator and gets even better after a couple of days.

Serve with or without rice.

Suzy Note: You can use frozen grilled chicken strips, and cook in microwave, one serving at a time....skipping chicken instructions as listed above.
