Double Maple Cupcakes

Ingredients:

1/2 cup granulated sugar
5 tbsp butter, softened
1 tsp vanilla
1/2 tsp imitation maple flavouring
2 large eggs
1-1/4 cups flour
1-1/4 tsp baking powder
1/4 tsp salt
1/4 cup milk
1/4 cup maple syrup.
Frosting:
3 tbsp maple syrup
2 tbsp butter, softened
1/2 tsp vanilla
1/2 tsp imitation maple flavouring
1/8 tsp salt
1-3/4 cups icing sugar.

Method:

To prepare cupcakes, beat first 4 ingredients with electric mixer for 5
minutes at medium speed. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, and salt in a bowl, stirring with a whisk. Combine milk and syrup. Add flour mixture to sugar mixture alternately
with milk, beginning and ending with flour mixture. Mix after each addition. Bake at 350 for 20 minutes.
To prepare frosting, Beat maple syrup with next 4 ingredients, at medium
speed with an electric mixer for 1 minute.
Gradually add icing sugar beating just until blended. Do not overbeat.
Spread frosting over cupcakes.
Makes 1 dozen. For cake, instead of cupcakes, bake in a 9 inch square or
round pan coated with cooking spray and bake for 25 minutes at 350 degrees.
