Fruit And Cereal Brunch Cake

Ingredients:

2 cups Total" Cereal
1 cup orange juice
1/4 cup vegetable oil
1 egg
2 medium bananas, mashed
1 1/2 cups Gold Medal All-Purpose Flour
3/4 cup sugar
1/2 cup raisins, if desired
1 teaspoon haking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Streusel Topping (see below)

Method:

Heat oven to 350 degrees. Grease square pan, 9x9x2 inches. Mix cereal and orange juice in large bowl; let stand until softened, about 2 minutes. Mix in oil, egg and bananas. Stir in flour, sugar, raisins, baking soda, cinnamon and salt. Spread in pan. Bake until top springs back when touched, 40 to 45 minutes. Sprinkle Streusel Topping over warm coffee cake. Set oven control to broil and/or 550 degrees. Broil with top about 5 inches from heat until bubbly, about 1 minute. (Watch carefully to avoid burning.)
Streusel Topping
1/2 cup packed hrown sugar
1/2 cup chopped nuts
1/4 cup Gold Medal All-Purpose Flour
1/4 cup butter or margarine, softened
1/2 teaspoon ground cinnamon
Mix all ingredients until crumbly.
Makes 9 to 12 servings.
