German Stolen Bread


3/4 cup raisins
1/2 cup chopped mixed candied
fruit and nuts
1/4 cup currants
1/4 cup rum
4-4 1/2 cups all purpose flour
2 envelopes active dry yeast
1 cup milk
1/2 cup butter or margarine
1/4 cup sugar
1 teaspoon salt
2 eggs
2 tablespoons grated orange peel
1 tablespoon lemon rind
1/2 teaspoon almond extract (optional)
1/2 cup chopped blanched almonds or Brazil


Soak first 3 ingredients of German stolen recipe stollen
in rum. Heat and stir milk, butter, sugar, and salt till warm (100 to 110
F) Sprinkle yeast oven milk and stir. Add 1/2 cups of the flour, eggs, peel and almond extract. Beat at low speed of electric mixer for 1 to 2 minute, scraping bowl. Beat 3 minute at high speed Stir in fruit rum mixture, nuts and enough remaining flour to make a soft dough. Knead on floured surface until smooth Place in a greased bowl; turn once and cover ; let rice till double (about 1 1/2 hours). Punch down divide
in half to 10 * 7 inch ovals. Fold long side over to within 1/2 inch of opposite
side; seal. Place on greased baking sheets Cover let rise till double. (about 45
minutes) Bake at 375 ? F for 15 to 20 minutes. Glaze while warm. Makes 2 loaves.
Add about 1 1" tablespoons milk to 1 cup confectioners sugar Add 1/4
teaspoon vanilla.
