Glazed Sweet Potatoes (Diabetic)


1 cup frozen apple juice concentrate, thawed
2 teaspoons cornstarch
1/3 cup Equal? Spoonful*
1 teaspoon stick butter or margarine
1 teaspoon maple extract
1 teaspoon vanilla
2 pounds sweet potatoes, peeled, cut into 1-inch slices, cooked, kept warm


1. Combine apple juice concentrate and cornstarch in small saucepan. Bring
to boil over medium heat, stirring constantly. Boil and stir 2 minutes or until thickened and bubbly. Remove from heat. Stir in Equal?, butter, maple extract and vanilla until blended.
2. Pour glaze over potatoes in serving bowl; toss gently.

Helpful Hints:

Makes 8 servings.
* May substitute 8 packets Equal sweetener.
