Granny's Chicken and Dumplings

Ingredients:

Method:

Buy a FAT HEN?not a fryer!! Have the butcher cut it in Four pieces. (do not skin it yet)
Wash chicken in cold Water and then place in large boiler and cover with water. Drop in 2 chicken bouillon cubes. (do not add salt yet)
Cover with lid and cook until very tender. Remove from
Broth, place on cookie sheet or large platter until cool Enough to remove skin and remove meat from bones. You Don?t want any bones in your chicken and dumplings!.

Place de-boned chicken in a large bowl, pour broth over it And put in refrigerator Over night. Grease will collect on top. Next day remove bowl from refrigerator and skim off yellow fat.Save fat in a small bowl. Pour broth in large pot. (
save 1 Or 1 ? cups of broth for dumplins.) Add 1 or 2 cans of Chicken broth. Cut or tear chicken in pieces.
do Not add to broth!!! Place chicken pieces in frying pan and Add small amount of broth so you can heat before adding to Broth,later.

While broth is heating, in a large bowl, put 4 cups of self- rising flour. Make a well in the middle, pour ? cup of Broth and 1 egg. Stir with a fork, then start bringing the Flour into the well with your fork until all flour is used And you have a big ball. (add small amount of broth at a time.)

Divide this ball into 3 balls and roll each in flour. Dust 3 cookie sheets with flour and place 1 ball on each Cookie sheet. Roll out with rolling pin. Use flour on rolling Pin to keep from sticking. May have to sprinkle flour on Batter occasionally to keep from becoming sticky.
When you Have rolled out all 3, use a knife and make long strips. Carefully lift strip and over your pot of bubbly broth, tear Off small pieces and drop into bubbly broth. Stir occasionally With a wooden spoon. After all dumplins are in, add your Heated chicken, carefully, and then add 1 can of cream of Chicken soup, stir. Turn off burner, cover for 15 minutes Before serving.

Helpful Hints:

for dumplins: You can use frozen Kettle dumplins.
But you should lay them out on wax paper for a few
Minutes before cutting in pieces to drop in boiling broth oR, you can use can biscuits. flour each biscuit and
Place on floured wax paper, roll out with rolling pin,
Really thin. Cut in strips and then pieces and drop into The boiling broth.
