Greek Salad2

Ingredients:

Salad
10 oz. baby spinach
1 c. grape tomatoes, halved
1 c. cucumbers, chopped
1 c. bell peppers, chopped (I used mini peppers)
8 oz. feta cheese, cubed
1/2 c. pitted kalamata olives
1/2 c. red onion, diced
Greek Dressing
1/2 c. olive oil
1/4 c. red wine vinegar
2 Tbsp. lemon juice
1/2 Tbsp. dried oregano
3 cloves garlic, minced
1/2 tsp. dijon mustard
1/4 tsp. salt
1/4 tsp. pepper

Method:

1. Spread spinach out in a large salad bowl.
2. Top with remaining ingredients, arranging as desired.
3. Prepare dressing by combining all ingredients in a small jar with a lid; shake vigorously until combined.
4. Pour dressing over salad as desired.
5. Serve immediately after adding dressing.
