Green Goddess Salad Dressing 3

1 avocado, peeled and pitted
1 cup mayonnaise
2 tablespoons green onion
1 garlic clove
1 tablespoon lemon juice
1 teaspoon tarragon, fresh or dried
5 anchovies
Salt and ground black pepper, to taste


1. In a blender, combine the avocado, mayonnaise, green onion, garlic, lemon juice, tarragon, anchovies, salt and pepper. Process until smooth, adding water if necessary.
2. Chill for 24 hours before serving.

This recipe for Green Goddess Dressing was extremely popular in the 1970s—and we're bringing back as a time-honored classic!
Makes about 2 cups.
