Gypsy Stew

Ingredients:

3 sweet potatoes
1 can garbanzo beans
1 can of another kind of beans
1 14 oz. can diced tomatoes
10 oz. package frozen spinach
2 peppers cut up
1 lb. boneless chicken, beef or pork cut in bite size pieces
1 large onion coarsely chopped
3 garlic cloves, minced
salt and pepper to taste
2 tsp. each of paprika and cumin
½ tsp. cinnamon
1 tsp. red pepper flakes
3 cups chicken, beef or vegetable broth

Method:

Brown meat in 1 tblsp. oil. Saute onion, garlic and peppers.
Put all ingredients into a pot and simmer for about 2 hours or in a crockpot for 4 to 5 hours.

Kay's note: when I make this I use vegetable broth no matter what the meat.
