Hiram Walker's Supreme Brandy Burgers


2 shallots or scallions, finely chopped
4 tablespoons butter
1 pound lean ground chuck
1/4 pound boiled ham, ground
4 tablespoons ice water
1 egg, slightly beaten
Pinch of thyme
Fresh ground pepper
1 tablespoon oil
1/4 cup beef consommé
1/4 cup Hiram Walker Apricot Flavored Brandy
2 tablespoons butter


Sauté the shallots, add 4 tablespoons butter, ground chuck, ham, water, egg, thyme and pepper. Wet hands and shape into patties. Refrigerate for 1 hour. Dust patties with flour; sauté in oil and keep in warm oven. Add consommé, Apricot Brandy and cook 5 minutes. Add 2 tablespoons butter and pour over patties. Sprinkle with parsley.
