Hummingbird Cake 2

Ingredients:

1 package plain yellow cake mix
1 8 ounce can crushed pineapple, undrained
1 medium, or 2 small bananas, mashed
1 half cup water
1 half cup oil
3 large eggs
1 teaspoon vanilla
1 teaspoon ground cinnamon

Place them all into a mixing bowl. Blend on low speed 1 minute. Increase to medium, and beat 2 minutes more.
Pour into 2 greased & floured 9 inch pans or into a greased 9 by 13 inch pan
Bake from 30 to 32 minutes at 350 degrees.

Method:

Cream Cheese Frosting
1 8 ounce package of cream cheese
1 stick butter
3 and three fourth cups powdered sugar
1 teaspoon vanilla
Place butter and cream cheese in mixing bowl, and blend on low for 30 seconds. Add powdered sugar, a little at a time and blend
on low for 1 minute. Add vanilla and beat on medium 1 minute more.
½ cup chopped pecans, toasted can be added to the frosting or sprinkled on top.

Helpful Hints:

Baker’s note: If using a 9 by 13 pan the frosting recipe can be cut in half if you wish or you can frost it heavily and use the remaining frosting at another time.
