Icebox Sugar Cookies

Ingredients:

1 cup all purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons butter softened
2/3 cup sugar
1 teaspoon vanilla
1 large egg white

Method:

Combine first 3 ingredients and set aside. Beat butter with mixer at medium
speed until light and fluffy. Gradually add sugar beating until well
blended. Add vanilla and egg white blending well. Add flour mixture stirring
until well blended. Turn dough out on to wax paper. Shape in to a 6 inch
log. Wrap log in wax paper. Freeze for 3 hours or until firm. Preheat oven
to 350 degrees. Cut log in to 24 slices and place slices 1 inch apart on a
greased baking sheet. Bake 8 to 10 minutes. Makes 2 dozen.
