Irish Potato Candy (Gluten Free)

Ingredients:

4 ounces cream cheese, softened
¼ cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
2 ½ cups flaked coconut
1 tablespoon ground cinnamon

Method:

Step 1 Beat cream cheese and butter together in a large bowl until smooth. Add confectioners' sugar and vanilla; beat until smooth. Mix in flaked coconut.
Step 2 Roll mixture into balls or potato shapes; roll balls in cinnamon. Place onto a cookie sheet and chill to set, at least 10 minutes. If desired, roll potatoes in cinnamon again for a darker color.

Irish potato candies are cute little confections that look just like little potatoes! This recipe does not contain potatoes; they are made using cream cheese and coconut.
