1 Cup margarine
2 Cups sugar
1 Cup sour cream
1/2 teaspoon vanilla
2 Cups sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 Cup pecans or walnuts
1/2 teaspoon cinnamon
2 Tablespoons brown sugar
Cream margarine, sugar and eggs. Fold in sour cream, sifted dry ingredients
and vanilla. Spoon 1/2 of batter into 10 inch tube pan. (greased and floured) Cover with 1/2 of mixed topping and repeat.
Bake at 350 degrees for 55-60 minutes. Cool before removing from pan. Sprinkle with powdered sugar.
This makes a delicious coffee cake with a somewhat firmer texture.
Note: This cake works well with almost any type of pan you have available, even muffin tins.
