Lauries Favorite Chili

Contributed By: Marlene Nord

Ingredients:

1 pound ground beef
fresh chopped or dried onion to taste (about one fourth cup)
Finely chopped cellery to taste (about one stalk)
1 half cup elbow macaroni
1 can chilli beans (drained)
1 can whole kernel corn (drained
1 can stewed tomatoes broken into pieces or one can diced tomatoes (undrained)
1 27 ounce can tomato sauce
3 7 ounce cans V8 juice
Spices: Chilli powder, garlic powder, taco seasoning black pepper, season salt (I use Morton's Nature seasoning)

Method:

Finely chop the onions and cellery and mix them with the hamburger
(you can put some more spices in the hamburger if you wish).
Crumble and brown the hamburger in a large skillet until it is all cooked through.
You can drain it if it is especially greasy. Otherwise, I don't, since I use lean burger.)
While the burger is cooking, boil the macaroni until it is chewy, not too done.
Drain macaroni and set aside.
Pour the cooked hamburger into a large saucepan or Dutch oven.
Add all of the other canned goods and spices. The reason I didn't specify amounts of spices is that I just shake until it feels good.
cook on high until it begins to boil. Reduce heat and simmer at least 45 minutes.
About two minutes before serving, stir in the macaroni. yum yum!

Helpful Hints:

Note: if you want to increase the amount, add one more can of each canned good, one more pound of Hamburger and use 1 cup of macaroni.
This also works well in a crockpot.
