Lentil Soup

1 c. chopped onions
1 c. chopped carrots
1/2 c. chopped celery
1 clove garlic, minced
1 can diced tomatoes
2 cans water
1 can chicken broth
2 c. lentils
1 t. parsley
1 t. thyme
Salt, Tabasco, and pepper to taste


Spray a heavy pot with Pam, etc. Saute the onions, carrots, and celery for about 5 minutes. Add everything else except salt. Bring to a boil and simmer
about 1 hour or until lentils are tender. Add salt to taste. You may need to add water as it cooks. Makes about 2 quarts.
