Melt the chocolate in a double boiler or in the microwave.
Make a sandwich using two vanilla wafers and peanut butter,
Place a popsicle stick in the peanut butter between the wafers.
Dip the cookie lollipop into the melted chocolate.
Cool on wax paper.
