Low Carb Taco Skillet

Ingredients:

1 lb. ground turkey
12 oz. frozen riced cauliflower
1/4 c. taco seasoning
1 c. chopped lettuce
1/2 c. diced tomatoes
1 diced avocado
1/4 c. black beans
1/4 c. finely shredded cheddar cheese
2 Tbsp. diced onion
1 Tbsp. minced cilantro

Method:

1. In a large skillet over medium-high heat, cook and crumble ground turkey.
2. Stir in riced cauliflower, taco seasoning, and 1/4 c. water. Cook, stirring, until cauliflower is heated through.
3. Remove from heat and top with lettuce, tomatoes, avocado, black beans, cheese, and onion.
4. Garnish with cilantro.
