MOROCCAN BEEF AND GREEN BEANS

Ingredients:

1 pound lean ground beef
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 teaspoons minced garlic
1 can (15 oz.) diced tomatoes
3/4 pound green beans, trimmed and cut in half
1 cup diced carrots
1 tablespoon chopped fresh mint or 1/2 teaspoon dried
1 box (10 oz.) couscous, cooked according to package directions

Method:

1. Heat 12-inch nonstick skillet over medium-high heat, 2 minutes. Add
beef; sprinkle with salt and pepper. Cook 3 minutes, stirring, until no
longer pink. Add garlic; cook 1 minute. Add tomatoes, green beans and
carrots; cover skillet and bring to boil. Reduce heat to medium and simmer
15 minutes, stirring once. Stir in mint.
2. Divide beef mixture between 4 shallow serving bowls. Serve with
couscous.
Makes 4 servings.
